OH, AND THERE WILL BE SEVERAL PHOTOS OF HUEVOS RANCHEROS BECAUSE IT IS MY FAVORITE BREAKFAST AND EACH NEW MEXICAN RESTAURANT HAS ITS OWN VERSION. I COMPARE HUEVOS RNCHEROS IN MANY RESTAURANTS BUT I AM POSTING PHOTOS OF ONLY THOSE I LIKE BEST AND WILL EAT AGAIN ON A REGULAR BASIS.
THIS IS ONE OF MY FAVORITE VERSIONS OF HUEVOS RANCHEROS AND IT CAN BE FOUND AT CHURCH STREET CAFÉ. THIS VERSION COMES WITH BEANS, PAPITAS (WHICH CAN NOT REALLY BE SEEN HERE BECAUSE THE TORTILLA WAS PLACED ON TOP OF THEM), AND CORN TORTILLAS BENEATH EVERYTHING ELSE. In fact, as an added bonus, the corn tortillas are BLUE corn tortillas. The red chili sauce is really good here. This restaurant is featured on my FAVORITE RESTAURANTS page because it is one of my favorite restaurants in Albuquerque, being housed in one of the oldest pioneer homes of the Old Town neighborhood. These Huevos Rancheros are an absolute A+
New Mexico has several traditional breakfasts. My favorite New Mexican breakfast is Huevos Rancheros. I think they were invented in southern California but I suspect they are more traditional in New Mexico. Just about every New Mexican restaurant that is open for breakfast will have Huevos Rancheros. Papa Felipes is a New Mexican restaurant that is NOT open for breakfast but they still have Huevos Rancheros on their menu. IN FACT, THEY HAVE SEVERAL VERSIONS OF HUEVOS RANCHEROS BECAUSE YOU CAN GET THE REGULAR AND THE DELUXE VERSIONS THAT HAS MEAT ON IT AND WE CAN ALSO CHOOSE FROM VARIOUS SIDES LIKE PAPITAS, REFRIED BEANS, WHOLE BEANS, SPANISH RICE OR MEXICAN STYLE CORN.

At PAPA FELIPES' you can get several versions of Huevos Rancheros because they will ask you more than how you want your eggs cooked and what chili sauce you want. You can choose what two sides you want and the choice will be from several possibilities like Papitas, Whole Beans (the two I have here), Mexican Style Corn, Spanish Rice, or Refried Beans. I also rate this Huevos Ranchers a B+ because, although all the ingredients are very delicious here, their version comes with the flour tortilla on the bottom and I prefer the corn tortilla. At least the flour tortilla was folded up so it did not get soggy which is something they will do if they are covered with all the ingredients which is something you do not want
Many New Mexican restaurants will also serve Flan because it is very traditional to Latin American cuisine. It is a custard made with milk, egg, and some kind of sweetener. The sauce on top is a caramel sauce. The milk is usually a condensed milk that may already have the sweetener in it. Cinnamon is also usually sprinkled on it. As you can see here, there is Cinnamon sprinkled all over the flan and the plate. .
This is another version of Huevos Rancheros that can be found at FRONTIER RESTAURANT. Frontier Restaurant serves Huevos Rancheros all day. This restaurant is not strictly a New Mexican restaurant but they do have a section of the menu that is dedicated to New Mexican cuisine. This is a much loved restaurant with locals and tourists alike. It is across the street from the University of New Mexico main campus and has been here since I first moved to Albuquerque. The address is 2400 Central Street NE. Many believe that the best green chili sauce in Albuquerque will be found here. This very likely is the case because I always eat my Huevos Rancheros with green chili here although I almost always prefer red chili sauce on New Mexico food. I did try Huevos Rancheros here with red chili but it did not stand out as better as compared to other places so I stick to their green chili here. It really is especially good. Corn tortillas are used under all the other ingredients, just as I prefer. No potatoes at all are included with this version but that does not bother me because there are plenty of delicious whole beans included. There is also a large, homemade tortilla included. If you eat here, you can watch them cook the tortillas on a tortilla making machine. The machine is at the end of the counter where we order what we want to eat and drink. I rate this version with an A.
HERE IS AN EXAMPLE OF BREAKFAST BURRITO AND GUACAMOLE SALAD (the ensalada de guacamole). These are at LITTLE ANITAS' Restaurant. The Guacamole Salad here comes in an edible corn tortilla shell bowl and the Breakfast Burrito comes smothered with chili sauce (red in this case) unlike the hand held version of Breakfast Burrito that I ordered at Twisters fast food restaurant pictured above. Hand held burritos have a small amount of chili sauce inside the burrito.
AND THIS IS THE GARDUÑOS RESTAURANT VERSION OF HUEVOS RANCHEROS. THE RED CHILI SAUCE IS REALLY GOOD BUT GEARED VERY MUCH FOR THE TOURISTS BECAUSE THERE IS NO CHILI HEAT FACTOR AT ALL. THEIR CHILI SAUCE IS VERY MILD. I AM RATING THIS VERSION AT B- BECAUSE I DO LIKE SOME CHILI HEAT AND I PREFER WHOLE BEANS TO REFRIED BEANS WHICH WE HAVE HERE. THE EGGS WERE EXACTLY LIKE I ORDER THEM (OVER MEDIUM).

This is a New Mexican breakfast called Chilaquiles. It is a simple and inexpensive meal that can be found in a few places like LITTLE ANITAS' where I am now. It is made with "flash fried" corn tortilla chips smothered with red chili, two eggs done like you want them, white cheese, and refried beans (queso blanco, dos huevos, y frijoles). The flour tortillas and sopapilla came automaticaly with the meal. I ate the sopapilla with honey as a dessert..

THIS IS IKAN MAS. IKAN MAS IS GOLD FISH COOKED IN CURRY SAUCE. IT IS TRADITIONAL FOR A BATAK COUPLE TO FEED EACH OTHER A PIECE OF THIS FISH WHEN THEY GET MARRIED. SINCE FARIDA IS BATAK DAIRI AND BATAK TOBA, WE EACH TOOK A SMALL PIECE OF THE IKAN MAS WITH OUR FINGERS AND FED EACH OTHER A SMALL PIECE. I THINK THIS TRADITION ORIGINATED WITH THE MININGKABAU BATAK OF WEST SUMATRA BUT IT IS PRACTICED BY MOST OF THE 5 BATAK TRIBES IF NOT ALL ( I AM NOT SURE IF THE BATAK KARO PRACTICE THIS.
IN THE TOWER OF BASILICA DE LA VOTA NACIONAL, WE WERE ABLE TO RELAX AND SNACK A BIT. I DO NOT KNOW IF ALL THE TOWERS HAVE CAFES IN THEM. WE CLIMBED THE TOWER THAT IS ON THE RIGHT SIDE OF THE MAIN ENTRANCE OF THE CHURCH. I DO NOT KNOW IF PEOPLE WERE CLIMBING THE TOWER ON THE LEFT SIDE OF THE MAIN ENTRANCE BECAUSE WE DID NOT SEE ANYONE IN THAT TOWER. WE DID SEE PEOPLE CLIMBING THE THIRD TOWER WHICH IS NOT AS HIGH AS THE TWO FRONT SIDE TOWERS. WE ORDERED TWO HOT TEAS, A TEA WITH MILK, ONE HOT CHOCOLATE AND TWO HUMITAS. I CAN NOT GET ENOUGH OF THOSE HUMITAS.
THIS VIDEO IS A RATHER LONG WALKING TOUR AROUND THE AREA OF THE HOTEL WHERE WE WERE STAYING. I WAS LOOKING FOR THE BAKERY WHERE I HAVE SHOPPED A COUPLE OF TIMES ALREADY AND FOR A DESSERT PLACE CALLED GELATO MIX. I FOUND THEM AS WELL AS A COUPLE OF OTHER INTERESTING PLACES. WE CAN SEE HAPPY PANDA CHINESE RESTAURANT FROM OUR HOTEL WINDOW.
THE BAKERY IS NEXT TO THE HOTEL; PANIFICADORA AMBATO. GELATO MIX IS LOCATED ONE CITY BLOCK FURTHER DOWN AVE. 12 DE OCTUBRE. CAFÉ QUITO IS AT THE SWISSÔTEL QUITO WHICH IS ACROSS THE STREET FROM OUR HOTEL. THERE IS ALSO AN ITALIAN RESTAURANT CALLED LA BRICIOLA AT THE CORNER OF AV. ISABELLS CATÓLICA AND FRANCISCO SALAZAR. SAN HONORÉ AND MUSA RESTAURANTE ARE ALSO GOOD SOUNDING PLACES IN THEIS AREA.
OH, AND WHILE AT CAROLINA PARK, WE TRIED THE ESPUMILLA. WE DID NOT REALLY LIKE IT. THE TOP PART WAS RATHER FUNKY. THE TEXTURE IS ODD AND THE FLAVORS DID NOT STAND OUT ENOUGH TO MAKE UP FOR THE STRANGE TEXTURE. WE DID LIKE THE BOTTOM PART THAT CONSISTS OF SEVERAL TYPES OF FRUIT PIECES SOAKING IN A DELICIOUS RED SAUCE. ESPUMILLA IS A TRADITIONAL ECUADORIAN DESSERT. IT IS A FOAM, NOT AN ICE CREAM, WHICH IS WHY IT IS NOT MELTING AS VENDORS SELL IT IN THE STREETS. IT IS MERINGUE WITH EGG WHITES, SUGAR, AND PUREED FRUIT. THE FRUIT IS SOAKING IN A RED BERRY SYRUP. THAT LAST PART IS GOOD.
WE SPENT SUNDAY IN SHOPPING CENTERS AND PARKS. WE FIRST WENT TO PLAZA OF THE AMERICAS. IT IS REALLY SMALL WITH FEW SHOPPING OPTIONS. IT DOES HAVE A FEW NICE CAFES AND A LARGE CINEMA. THE PLAZA OF THE AMERICAS IS SMALL BUT COZY. IT KIND OF LOOKS LIKE A SQUARE PARK WITH SHOPS, CAFES, AND CINEMARK SURROUNDING IT. AFTER WE LEFT PLAZA DE LAS AMERICAS, WE WALKED DOWN TO PARQUE CAROLINA. WE STOPPED TO TAKE A PHOTO AT A FUNKY STATUE. I COULD NOT FIND A NAME FOR THIS STATUE OF FOUR CHILDREN SITTING ON A BENCH TALKING TO EACH OTHER. IT IS IN A TINY PARK AND MAY BE CALLED DESCANSO. WE THEN CONTINUED WALKING UNTIL WE REACHED THE VERY LARGE PARK. IT HAS A VIVARIUM HERE. IT IS A SMALL SAMPLE OF REPTILE SPECIMENS INDIGIONOUS TO ECUADOR. THERE IS A SUPERMAXI SHOPPING CENTER ACROSS THE STREET FROM THE SOUTHERN END OF CAROLINA PARK SO WE WENT THERE TO BUY COLD MEDICINE FOR RENO WHO MAY HAVE GOTTEN A HEAD COLD. WE RELAXED AT A SPECIAL PLACE CALLED REPUBLIC DE CAFÉ. THERE IS A VIDEO HERE ABOUT JUST THAT. IMMEDIATLY ON THE SOUTHERN END OF PARQUE CAROLINA IS A METRO STATION. ONCE I SAW THE STATION ENTRANCE, I DECIDED WE SHOULD TRY IT OUT. IT IS GREAT. IT IS STILL NEW AND MADE TO BE EASILY USED BY THE MOST UNITIATED PERSONS IN METRO USE. IT ALSO COSTS ONLY .45 CENTS FOR ADULTS. I AM HAPPY TO HAVE USED IT. I TOOK A VIDEO OF IT WITH MY CELL PHONE SO I MAY UPLOAD IT HERE ALTHOUGH VIDEOS FROM MY CELL PHONE COME UP SMALLER HERE. WE GOT OUT AT PARQUE EJIDO METRO STATION. AFTER TAKING A COUPLE OF PHOTOS OF WRITERS (THERE ARE MANY STATUES OF POETS AND NOVELISTS HERE), WE WAKED THE REST OF THE WAY TO THE HOTEL.
